Ingredients (for 2 people):

  • 700 g rolled oats
  • 400 g nuts and/or seeds (walnuts, almonds, pistachios, pumpkin seeds, etc.)
  • 170 g dried fruit (cranberries, sultanas, dried apricots, etc.)
  • 250 ml coconut or olive oil
  • 200 ml maple syrup or organic honey
  • 1.5 tsp. salt
  • 1 teaspoon cinnamon
  • 2 tsp vanilla extract
  • Optional: 100 g chocolate chips or grated coconut

Preparation :

  1. Preheat the oven to 190°C and line a large baking tray with baking parchment.
  2. Mix the dry ingredients: In a large bowl, combine the rolled oats, nuts/seeds, salt and cinnamon.
  3. Add the wet ingredients: Pour in the melted coconut oil, maple syrup (or honey) and vanilla extract. Mix well to coat each ingredient.
  4. Spread the mixture on the baking tray in an even layer.
  5. Bake for 20 to 25 minutes, stirring halfway through. For a more compact granola, press the mixture down with a spatula.
