Indulge in our hazelnut melt-in-your-mouth biscuits, home-made biscuits with crunchy hazelnut pieces. A quick and easy recipe for soft cookies, perfect for a snack or to accompany a coffee.
In a large bowl, mix the softened butter with the peanut paste, white sugar, brown sugar and a pinch of salt until smooth. Then carefully fold in two eggs to make a smooth paste.
To make the caramelised hazelnut chips, place the Maître Prunille hazelnut kernels in a frying pan over a medium heat. As they cook, sprinkle with sugar, adding more as soon as the melted sugar forms a coating.
Gently crush the cookie dough balls on a baking tray lined with baking paper.
Add the caramelised hazelnut flakes on top, then bake at 165 °C for 5 minutes.
Once out of the oven, pipe in 3 dots of praline and bake again for 2 minutes. Add the salted butter caramel and enjoy!
