  • Maître Prunille shelled hazelnuts
  • Maître Prunille walnut kernels
  • 2 pears
  • 2 tbsp Roquefort cheese
  • 2 tbsp fromage blanc
  • 1 tbsp honey
Preparation

Start by washing the pears, cutting them in half lengthways and removing the seeds with a spoon.

Heat a grill pan (or use a panini maker) and place the pears in it, cut side down. Leave them to grill for a few minutes until they are lightly caramelised. Meanwhile, mix the Roquefort with the fromage blanc to make a smooth cream and set aside. Crack the walnuts and hazelnuts, roast them lightly in a dry frying pan, then crush them coarsely.

Once the pears are toasted, arrange them on a dish and top each half with a spoonful of Roquefort cream. Add the crushed walnuts and hazelnuts on top and finish with a drizzle of honey. Serve warm to enjoy all the flavours.
