Semi-cooked prunes are the result of specific expertise. They are halfway between the Ente plum and the prune.

Unlike the classic Agen prune (dried and then rehydrated), the semi-cooked prune is dried directly to 35% moisture content. Its flavour is subtle, fruity and caramelised.
