Add the sugar, salt, flour, baking powder, eggs and orange blossom water to the bowl of a mixer.
Knead for 3 to 4 minutes until the dough pulls away from the sides of the bowl.
Add the butter in small pieces and knead for a further 2 minutes.
Transfer the dough to a floured bowl, cover with a tea towel and leave to rest overnight in the fridge.
The next day, preheat the oven to 180°C.
Flour a work surface and divide the dough into 14 portions.
Place 4 pitted prunes in each portion and shape into balls.
Butter and flour the brioche moulds, then place the dough balls in the moulds.
Cover the moulds with a tea towel and leave the dough to rise for 1 hour.
Place in the oven at 180°C for 10 minutes.
Leave to cool before removing from the mould onto a wire rack.
