For the Agen Prune compote

  • 200 g Maître Prunille Agen Prunes
  • 60 g sugar
  • 100 g onions
  • 100 ml wine vinegar

For the grilled cheese :

  • 1 piece of Laguiole cheese
  • Slices of farmhouse bread
  • butter
Preparation

Make an Agen Prune chutney: peel and slice the onion and cut the Agen Prunes into 4 pieces.

Fry the onions in a pan with a drizzle of oil, then add the Agen Prunes.

Add the sugar, then deglaze with the vinegar and season. Leave to stew for 10 minutes.

Make the grilled cheese: spread butter on one side of each slice of bread.

Cut slices of Laguiole cheese.

Spread the Agen Prune compote on the unbuttered side of the bread, add the Laguiole slices and close.

Fry the sandwich for 1 minute on each side in a hot pan until golden brown.
